Inspired by a particularly exquisite glass of whiskey during a trip to London, Paul Cirka set out to reimagine Canadian whiskey. Paul was adamant about giving his spirits a distinctive terroir character.
CIRKA is rooted in its terroir; sourcing from local farmers and foragers and collaborating with chefs and bartenders. Inspired by North American microdistilleries and the high quality of local products in the province, we became the first Quebec microdistillery to produce spirits from grain to bottle, a novel concept in the region.
In the meantime, the company dedicated itself to producing white spirits, which gained incredible international acclaim.
